I come to you today with your next best breakfast idea. These blender banana pancakes have seriously been a game changer for me. No doubt they will be for you too. The first time I made them – sometime in the middle of the summer – I was amazed at how simple they were to pull together, and how delicious they tasted when all was said and done. I’ve been making them probably every couple of weeks since then. And who has pancakes that often?? Not Gabrielle anyway. They’re that easy, and that good.
Obviously you’re gonna need a couple of ripe bananas. Plus eggs, oats, cinnamon, vanilla, salt and baking powder. Start by pulsing the oats in the blender. I like to grind them separately to make sure they get nice and flour-y, particularly since I don’t have a high powered blender. Once they’re powdery add in all your other ingredients and mix them up until everything is combined. Then you’re good to go! Hope you had your griddle heating up because now’s the time to start frying. 😉
These pancakes will work with any kind of ripe bananas, but I’ve been making mine with one species of local bananas that stay green even when they’re ripe! I don’t know if there’s a special name for them, all I know is that they’re good. You know how sometimes those bright yellow commercial bananas can be dry and chalky? Not so with these ones. Their insides are moist, and they’re just a little firmer to the teeth.
It can be difficult knowing when they’re ripe, since as I said they stay green the whole time, but they do become a little softer to the touch and get flecks of brown on their skin. Like yellow bananas they go brown when they’re overripe, so basically they skip the yellowing step. They’re green, they’re green, a little less green with some brown and then wham! Brown.
My favourite bananas are our sugar bananas, which are cute and chubby! They’re about the length of a middle finger and fat. Like the fattest sausages. They’re sweet, hence the name sugar banana, and I can eat them all day.
Whatever bananas you use, you should definitely give these pancakes a try. The longest part of the process is waiting for them to cook, but this recipe makes a lovely small batch so you won’t be standing at the stove for long. Then you can plate em up, maybe with some peanut butter on the side, like I like em, and have at it!

Blender Banana Pancakes
Ingredients
- 1/2 cup rolled oats
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- pinch of salt
- 2 overripe bananas
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Pulse oats in the blender until they form a powder.
- Add the rest of the ingredients to the blender and mix until combined.
- Use a 1/4 cup measure to scoop the batter onto a hot pan. Once you see a few bubbles forming on the surface, flip and cook the second side for 2-3 minutes, until brown.
- Enjoy!
